Bliss Foods was started by Bob Bliss, who grew up appreciating the boarder-town Quesadilla Especialthe dish which inspired the original Puffadilla. An accountant by trade, Bob’s Puffadilla was born out of a passion for bringing the uniqueness of his childhood favorite to today’s foodservice industry and has been embraced by Chefs and restauranteurs who can appreciate both its deliciousness and versatility. With Bob at the helm, Bliss Foods operates on a philosophy of pursing perfection in every step of the manufacturing process, from insisting upon the Puffadilla’s hand-crimped enclosure to the quest for the ultimate cheese melting combination. The Puffadilla is an authentic border-town dish with an undeniable cult following. Known to many as a quesadilla especial, this puffy quesadilla is crafted from a delightfully light and flaky, hand-crimped dough that puffs up when frying to reveal gooey cheesy goodness. The original Puffadilla features a blend of Pepper Jack and Mozzarella cheeses selected for their superior melting and food-pairing capabilities. Serve the Puffadilla on its own as a crowd-pleasing appetizer or entree, or cut and stuff with just about anything that your culinary prowess desires.

With various options for prepping, cooking and stuffing, the Puffadilla offers maximum versatility for use! Whether it’s most convenient to thaw overnight, in an hour at room temperature or cook from frozen, the Puffadilla provides ease of use for any menu.

SLOW THAW: Thaw Puffadillas under refrigeration overnight, then fry at 350 degrees until puffy and golden brown .
QUICK THAW: Thaw Puffadillas at room temp for an hour, then fry at 350 degrees until puffy and golden brown.
FROM FROZEN: Cook Puffadillas from frozen at no higher than 350 degrees. Puffadillas cooked from frozen are lighter in color, with a less bubbly texture.


SUN UP PUFFADILLA

INGREDIENTS:
2 Eggs
¼ C Chorizo Sausage, cooked
¼ C Potatoes, diced and cooked
1 T. green chiles, diced

Deep fry Puffadillas at 350 degrees until golden brown.  Slice top half open along the rounded edge, and gently pull the top up exposing the cheese filling.  Fill with warmed ingredients.  Close top, and serve immediately.

PIZZA PUFFADILLA

INGREDIENTS:
1 oz pepperoni, sliced
1 oz Italian Sausage link, cooked and sliced into ½ inch rounds
1 oz mushrooms, sliced and sautéed until soft
½ oz black olives, sliced

Deep fry Puffadillas at 350 degrees until golden brown.  Slice top half open along the rounded edge, and gently pull the top up exposing the cheese filling.  Fill with warmed ingredients.  Close top, and serve immediately.

FAJITA PUFFADILLA

INGREDIENTS:
3oz grilled chicken breast, sliced into ½ strips
¼ C Bell Pepper strips, sautéed until soft
1/8 C Red Onion, sliced and sautéed until soft

Deep fry Puffadillas at 350 degrees until golden brown.  Slice top half open along the rounded edge, and gently pull the top up exposing the cheese filling.  Fill with warmed ingredients.  Close top, and serve immediately.

APPLE PIE PUFFADILLA

INGREDIENTS:
3 Medium apples
1 T. Lemon juice
3 T. brown sugar
1 T. AP flour
1 t. Cinnamon

Peel and dice apples into large pieces and stir in bowl with lemon juice to combine. Add brown sugar, AP flour, and cinnamon to the apples. Stir to combine. Heat mixture on the stove over medium heat, stirring occasionally, for 10-15 minutes or until the apples are tender. Set aside to cool to room temperature. Deep fry Puffadillas at 350 degrees until golden brown.  Slice top half open along the rounded edge, and gently pull the top up exposing the cheese filling.  Fill with warmed ingredients.  Close top, and serve immediately.
